The Silikomart Plissé 100 silicone mould creates two elegant pleated rings inspired by the folded textures of haute couture. Conceived by Pastry World Champion Jérôme de Oliveira, its fine radial lines give entremets and plated desserts a refined finish. Therefore, pastry chefs can add detailed decoration without piping or shaping each fold manually.
The mould contains two cavities measuring Ø140 × H10 mm. Each cavity holds 100 ml, providing a total capacity of 200 ml. Moreover, the shallow ring format works particularly well as a topper, decorative layer or insert rather than as a complete deep cake.
Use Plissé 100 with mousse, semifreddo, chocolate, gel, sponge and other compatible mixtures. Its central opening also creates space for fruit, cream, chocolate decorations or contrasting sauces. In addition, mirror glaze and velvet spray can highlight the radiating pleats and improve visual definition.
For frozen preparations, spread the mixture evenly across each cavity and remove excess product. Freeze it completely before demoulding, then gently peel the silicone away to preserve the narrow folds. Support the flexible mould with a flat, rigid tray during filling and transportation.
The silicone tolerates temperatures from approximately -60°C to +230°C. Consequently, it supports compatible oven, microwave, freezer and blast-chiller use. Avoid direct flames, exposed heating elements and sharp utensils.
