Firstly, the two complementary mould halves reproduce the front and back of Lady Cocca. Consequently, chocolatiers can create a balanced hollow figure with clean contours and consistent proportions.

The mould defines the hen’s beak, comb, eyes and hanging wattle while maintaining a smooth, rounded body. Moreover, the Lady Cocca chocolate mould works with properly tempered dark, milk, white or coloured chocolate.
