The eight perforated rings each measure Ø70 × H20 mm. They hold the pastry in shape while the shells bake. Meanwhile, the silicone mould has eight Ø64 × H18 mm cavities, each with a 47 ml capacity. As a result, you can prepare eight consistent toppings with a combined mould capacity of 376 ml. Their smaller diameter lets each topping sit inside the tart shell’s outer rim.

First, line the rings with dough and bake the shells according to your recipe. Next, fill the silicone mould with mousse or another suitable preparation.
